SUMMER C™ AND MÂCHE SALAD— PERFECT PAIR FOR JULY 4TH CO-PROMOTION
Salinas, Calif. – June 13, 2008: Get your Summer C™ with California Tree Fruit and Epic Roots Mâche salad, grown in California, as the two pair up for a July 4th co-promotion.
Did you know that California peaches, plums and nectarines are good sources of vitamin C? And Mâche, a sweet, nutty salad green is an excellent source of vitamin C? Try the Mâche and Goat Cheese Salad with Baked Plum Vinaigrette, featured in the on-pack recipe booklet, to boost your vitamin C intake this summer. Together the combination creates a recipe that packs a Summer C™ one-two punch, which is as delicious as it is nutritious.
Epic Roots Mâche and Mâche Mixes will feature the on-pack eight-page Recipe Booklet that includes the recipe, nutrition information, benefits of vitamin C and a 50-cents-off coupon to generate repeat purchases of Epic Roots Mâche products. What better way to celebrate the summer than with a nutritious recipe at a discount!
In addition to vitamin C, Mâche is an excellent source of vitamin A, Iron, Folic Acid, and Zinc. It is also a good source of Dietary Fiber, Potassium and Calcium. At only 30 calories per four-ounce serving, Mâche works well in any recipe calling for mixed greens or spinach.
California peaches and nectarines provide 15% of the recommended Daily Value (DV) of vitamin C, and plums provide 10% of the recommended DV of vitamin C. These fruits also contain other important nutrients, including potassium, fiber and vitamin A. Peaches, plums and nectarines contain 2 grams of fiber each, with peaches and plums containing 230 milligrams of potassium and nectarines containing 250 milligrams. Peaches have 6% (252 IU) of the daily value of vitamin A, plums have 8% (422 IU) and nectarines have 8% (439 IU).
The booklets will be applied on each retail pack of Mâche for the U.S. market including all retail bags and clamshells of Epic Roots Mâche and Mâche Mixes Salade Européen, Salade Aux Herbes, Red Romance and Salade Verte shipped from June 17 through July 3, 2008.

Mâche and Goat Cheese Salad with Baked Plum Vinaigrette
Serves 4
Salad:
4 oz Epic Roots Mâche*
8 cherry tomatoes, cut in half
2 ripe California plums, sliced thin
4 Tbsp soft goat cheese, crumbled
8 Tbsp baked plum vinaigrette
Baked Plum Vinaigrette:
2 lbs California plums
2 Tbsp honey
3 Tbsp olive oil
3 Tbsp lemon juice
1 Tbsp fresh thyme
1 tsp Dijon mustard
2 tsp honey
1/4 cup red wine vinegar
1/4 cup cider vinegar
dash cinnamon
2 cups canola oil
1/2 cup olive oil
sea salt and black pepper to taste
*or use any Epic Roots MÂCHE MIX
Divide Mâche among plates. Arrange tomatoes and plums around Mâche. Top with goat cheese. Drizzle vinaigrette over and finish with freshly cracked black pepper.
Baked Plum Vinaigrette
Toss plums in honey, oil, lemon juice, thyme and pepper. Bake in oven at 350° until brown and soft, stirring occasionally. Remove from oven and let sit until cool enough to handle. Slice in half and remove pits. Transfer to food processor and purée. Add Dijon, honey, vinegars, and cinnamon. Slowly drizzle in oil while processing. Add salt and pepper to taste.
NOTE: Make vinaigrette a day in advance and keep in refrigerator. Keeps for 2 weeks.
